Gluten free flour, cornmeal, sugar, baking powder, salt.
Preheat oven to 400 F. Add contents of package to mixing bowl. Lightly beat 2 eggs in separate bowl. Add 6 Tbsp of oil or melted, cooled butter with 1 cup milk to dry ingredients. Add eggs to dry mixture and gently stir. Do not over mix.Spoon batter into greased muffin tin. Bake for 15-20 minutes. Let stand for 5 minutes and serve warm.

Keep some butter handy when they come out of the oven so you can add a 'plank' to each muffin half. OOOPS! Spill some maple syrup on your plate and clean it off with a muffin.
